If you have some leftover chicken in the fridge then this recipe is perfect for you! Chicken tends to dry up when left alone in the fridge BUT adding them into a soup solves this problem. I love soups, they are filling, inexpensive, nutritious, and creates several meals which you can meal prep.
INGREDIENTS
3 medium onion, diced
3 medium carrots, sliced
4 garlic cloves, crushed
leftover chicken, chopped or shredded
3 red chillies, seeded and sliced
1/2 tsp ground ginger
2 fresh lemons, zest, and juice
8 cups turkey, chicken, or vegetable broth
sea salt and freshly ground black pepper to taste
INSTRUCTIONS
Heat the oil in a large pot over medium-high heat.
Sauté your onion, carrots, chilli, and garlic for 3-4 minutes, stirring frequently.
Add your leftover chicken to the mix
Simmer your soup over medium-low heat, covered, for 20-30 minutes stirring occasionally.
Taste test and add sea salt and pepper as desired.
Serve your soup hot, with lemon slices, and garnish with fresh parsley or cilantro, jalapeño, and green onions.
